Twice Baked Potatoes

This recipe can be changed to suit your taste by changing spices and ingredients.

1. Bake enough potatoes for the family
2. After they have baked, remove them from the oven and allow them to cool.
3. After they have cooled a little use a knife and cut them all in half, length-wise
4. Using a spoon, scoop out the insides. Put it into a bowl and set the outsides onto a cookie sheet.
5. After you have finished that with all of the potatoes, start by mashing the potatoes.
6. Mix in some of your favorite ingredients. My kids like it when I add the following items:
Cheddar cheese, garlic salt, seasoning salt, pepper, parsley flakes, Ranch dressing and bacon bits.
7. Next, scoop the mixture back into the potato peels that you set on the cookie sheet.
8. Sprinkle some extra cheddar cheese on top
9. Place in oven at 350 degrees until hot

Las Palmas Chicken

Feeds 4-5 people

2 large cans of Las Palmas red chile sauce
Boneless Skinless Chicken (about 6-7 pieces)

First things first, cut the chicken in half if you want small pieces, if not then leave them the way they are!
Dump the sauce in a pot and add the chicken. Then let it boil over the fire ( medium ) for about an hour( an hour and a half if you want soft chicken ). Then if you want make some rice, the sauce goes well with rice! Just mix it together!

The sauce is spicy so be careful!

Nanaimo Bars

This is a traditional Canadian bar cookie whose origins are in Nanaimo BC Canada.

Bottom Layer

1/2 cup butter
1/4 cup sugar
5 tablespoons cocoa
1 egg, beaten
1 3/4 cup graham wafer crumbs
1 cup coconut

Melt first three ingredients. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs and coconut. Press firmly into an ungreased 8x8 pan.

Second Layer

1/2 cup butter
2 tablespoons and 2 teaspoons cream
2 tablespoons vanilla custard powder
2 cups icing sugar (powdered sugar)

Cream butter, cream, custard powder and icing sugar together well. Beat until light. Spread over bottom layer.

Third Layer

4 squares semi sweet chocolate (1 oz. each)
2 tablespoons butter

Melt chocolate and butter over low heat. Cool. When cool, but still liquid, pour over second layer and chill in refridgerator. If chocolate is too hot it will make the second layer melt and run together, so be careful :)
